If you’ve ever visited the Del Dotto caves in Napa or St. Helena, you know 2 things are true: 1) You’ll spend a lot of time trying many wonderful wines 2) In the process of trying these many wines, you’ll both be a bit tipsy and buy wine home at the end of the tour. On one of our visits, these were both very true and at the end, our guide recommended a very special wine for us to check out. This was at the time, the most expensive wine we’d ever purchased. We laid it down to rest and mature for a few years and broke it out last night. Right out of the bottle, before it ever had the chance to ‘breathe’, the mocha and vanilla came right out and provided such incredible balance to this big cabernet. It only improved as we continued to enjoy it with our meal. I’ll admit, I was a little worried last night when we opened the Cher that I’d made a bad buying decision, but I’m very happy to say that it was a great decision after all.
